I also love dinners that can feed a crowd. I'm usually cooking for at least 5 people. Sometimes we have 7 or 8 at our house for dinner. So there has to be enough to go around and then some.
I stumbled upon an idea. I was feeling Mexican-y, but not burrito-y. And actual enchiladas can take a bit of time to do right. Alas, I was stuck in between a rock and a casserole dish.
Oh! Casserole! BRILLANCE!
I threw this stuff together in about 20 minutes, then shoved it in the over an waited for my house to smell like a cantina. And boy did it!
4-5 large chicken breasts - cooked and shredded
2 1/2 cans of Cream of Chicken soup
2 1/2 cups Picante Salsa - Mild or Hot depending on how spicy you want it
1 1/2 tsp. chili powder
8 oz. sour cream
1 can (6 oz.) diced green chilies, drained
6 flour or corn tortillas
2 cups shredded cheddar cheese - divided in half
Optional Toppings or Additions
Chopped green onions
How to Make:
1 - Preheat oven to 350 degrees. Spray a 9x13" pan with non stick spray (make sure to get the sides too!)
2 - Mix the soup, salsa, and chili powder in a large bowl. Set one cup aside. Add the shredded chicken to the remaining mixture and stir to coat.
3 - Spoon half of the chicken mixture onto the bottom of the 9x13 pan. Layer two and a half tortillas on top. Make sure you fill all the empty spaces (that's what the half is for).
4 - Spread sour cream over tortillas and sprinkle with green chilies and 1 cup of shredded cheese. Layer more tortillas, filling the empty spaces as needed.
5 - Spread the second half of the chicken mixture on top of the tortillas then add more tortillas on top (fill in spaces!)
6 - Spread the extra 1 cup of salsa mixture over the top. Cover with foil.
7 - Bake for 30 minutes. Remove foil, cover with the second cup of cheese and return to the oven for 5-8 minutes, or until cheese is melted.
8 - Top with tomatoes, onions, green onions, olives, or whatever else to make them awesome!
You can do a side of corn or even Mexican rice on the side!
