This Lucky Beef Stew was super easy to put together, and it made the house smell amazing all day long. You can eat it by itself, or do what we did, and put it on top of mashed potatoes, because, let's be honest. Potatoes make everything a little bit more awesome.
The best thing about this stew is you are really able to customize it! Add more stuff in, take what you don't like out! You can totally make this you're own. But here is my recipe for my Lucky Beef Stew.
What You'll Need:
2 tablespoons olive oil
1 lb. stew meat
4 large carrots, peeled & chopped
1/3 of an onion, diced
2 cloves garlic, minced
salt & pepper, to taste
1/4 teaspoon thyme
1/4 teaspoon rosemary
3 medium bay leaves
2 cups beef broth/stock
2 tablespoons cornstarch
2 tablespoons water
1 small bag frozen peas
You can either make you're own mashed potatoes or use instant. We used Betty Crocker Instant Potatoes (Buttery flavor).
In large pot or deep skillet, brown stew meat in olive oil until browned on all sides, about 4 minutes.
Put peas, onions, and carrots in crock pot. Put the stew meat on top.
Pour beef broth over everything and add thyme, rosemary, and bay leaves.
Cover and simmer 4-6 hours on low or until meat is very tender.
About 30 min to an hour before serving, dissolve cornstarch in water and pour into crock pot.
Once the broth thickens slightly, it's done. Remove bay leaves.
Serve hot over mashed potatoes.
